I wanted to make a light lunch for Mani today, since he was sick yesterday at school, so we have a piece of light brown rice bread, carrots, corn fettuccine pasta, and peas inside an elephant divider.

Ants on a log, an apple, turkey and spinach sandwich with a turkey crown cutout, and my version of a chocolate pretzel treat.  I take Glutino gluten free pretzel sticks and dip them in soy nut butter and then I roll them in sprinkles.  Although, now Mani likes the Enjoy Life Foods boom CHOCO boom crispy rice bar. I may try melting one to see if he actually likes pretzels with chocolate.

I posted this on "What's for Lunch" Wednesday, Week 18 and this week is really great because for every post a food item will be donated to a Texas food bank, how cool is that.

I finally found this lunch on my husbands laptop.  He has over 1500 photos on his computer, it took forever just to find the picture and then it was another ordeal just to get it uploaded.  Ants on a log, ketchup in the container, Ian's gluten free chicken nuggets, and GoGo Squeeze apple apple flavor.

No photo for the 28th Day of School Lunch.  My husband was actually trying to be helpful and reset my iphone.  He saved my photos to his laptop but didn't finish the reset so the next time he went to save the pics he thought all the pics were saved and cancelled the save. He was trying to fix my volume, which hasn't been working since the phone flew out of my hand when I almost fell down the stairs. I was rushing to be on time for a wedding, which started an hour and 45 minutes late.

It's Wendesday already.  I will post this lunch at What's for Lunch Wednesday Week 17.  Today is a half day for Mani, so I made a quick simple lunch.  I used some of the turkey bacon from breakfast and made a turkey and spinach sandwich on light brown rice bread, carrots, a plum, and celery with soy nut butter.

Vanilla cake muffin, orange with cherry on top, carrots and pastrami with spinach on light brown rice bread with turkey cut outs for the face.  I really just wanted to use the picks to hold the sandwich together, so all of the spinach wouldn't fall out, but I thought a face would look better.

2nd Pizza Lunch
My sister found this neat applesauce GoGo Squeeze, it's perfect for Mani because there is no mess.  Mani went through a period in 1st and 2nd grade where he didn't throw his trash away because of some craziness with how trash was collected.  I had to clean many messy lunch boxes and I stopped sending applesauce altogether after he didn't throw away the opened container.

Well, thanks to my sister and GoGo Squeez, applesauce is back in lunch box rotation.  The Jewel store I purchased these from had them in three flavors, apple apple, apple cinnamon, and apple strawberry.  They also make apple banana and apple peach.  Mani picked apple apple and the apple strawberry.  They also are healthy and Jewel had them on sale 2 for $5.00.

To go along with the GoGo Squeez he also had celery with soy nut butter, carrots and Amy's gluten and diary free pizza.

TGIF lunch, popcorn, carrots, and a soy nut butter and jelly sandwich.  The bread had a perfect circle in it, so I decided to make a little face with some of the turkey bacon from breakfast for the eyes and mouth.  I glued the bacon on with soy nut butter and added some spinach for the hair.

Mushroom, spinach, and ground beef pizza on rice crust, vanilla cake muffin, and cantaloupe.  This is the first time I sent pizza for lunch for him and I wasn't even going to send it this time but he asked for it.

The crust is one from Whole Foods.  I'm going to take a picture and post it so I will not forget what brand it is because it is definitely a keeper.

Today was the first time I noticed that this little container has dogs and little dog bones on it.  So I thought that called for another dog theme lunch.  This doggy theme lunch contains, cantaloupe, strawberries with powder sugar in the little doggy container, carrots, turkey with strawberry jam on white rice bread, turkey dog cut out with spinach grass.

Mani actually surprised me yesterday and asked could we bake something again for him like the past weeks.  I had an unofficial goal of trying to bake or make something special for him on the weekends.  But I didn't really expect him to notice (silly of me), so now I guess it's an official goal.  Which I haven't decided is a good thing or a bad thing. 

This weekend was busy, my little sister flew in town for her best friend's wedding and of course I wanted to spend as much time with her as possible. So the last thing I wanted to do last night after fighting the terrible traffic to the airport was bake something.  But we he compromised and we made the Chi Chi's corn cake mix.  It was the quickest and easiest thing and Mani was very happy and he enjoyed  helping me.

Once I made the mix I figured I would cook the fish for today's dinner.  I'm glad I did because the only thing on Mani's mind as we left out for school this morning was going to the skate park again after school.  Yesterday was his first time going and he felt very intimidated at first but he finally was able to go down one small ramp and he was happy, YAY.

Today's lunch has a dog theme, watermelon, dog bone shaped mango, and in the doggy container is corn spaghetti pasta with red sauce, ground beef, and zucchini.  I also included two of the "Wonder Balls" that I had frozen.  I didn't taste the Wonder Balls before I put them in, so I hope they didn't suffer any freezer damage. 

I didn't want the Ziploc container to get stained, so I used the top container to one of the very first bento boxes that I purchased for the pasta.  I had started to throw the container out on Tuesday. My son never used it because it was too complicated, and I lost the straps that attached on the side when we moved.  But I'm glad I didn't because it worked out perfectly in this lunch.

I decided to post this lunch for What's for Lunch Wednesday  week 16 because although I'm quite happy with Mani's first pizza lunch the picture sucks and its just not that cute.  Besides I'm happy I finally used this container so I don't have to feel bad about wasting money and I'm proud of my mango dog bones, its not easy to make dog bones from a very ripe mango.

18th Day of School Lunch

Today was one of those days where I really didn't want to get out of bed. Yesterday was a late day, we didn't get home until 8:30pm.  I still had to check Mani's homework and help him study a little for his math test today. The good news is Mani totally didn't mind yesterday's lunch, the box came home completely empty, YAY.  So I had big plans for today's lunch.  Well, as you can see it didn't happen.

This was one day that I'm glad my son actually likes his toast on the dark side because if he didn't, we would have been even more late today.  The bread is white rice bread which doesn't take as long to toast as the brown rice. So I turned the knob down too low on the toaster, so I pushed it down a second time and of course started doing something else and forgot.  The sandwich is turkey with spinach, marshmallow treat, cantaloupe, and watermelon.  I was going to add carrots but somehow that didn't happen.  I'm lucky the fruit was already cut or that might not have happened either.

I decided maybe I could sneak one in on Wednesdays.  We'll see what he says when he gets home today.  Today's lunch contains cantaloupe, watermelon, Vanilla Cake muffin, carrots, and soy nut butter and jelly sandwich.  And since I can't use cheese for quick decorations, I used deli turkey to make the airplane on top.

Guilty replacement

To make up for the bad cookies last night, I made these muffins/cakes for Mani this morning. This is his first cake mix and still his favorite.  But this time we added two very ripe bananas, 3 "eggs", omitted  the oil and only added enough water to moisten the mix maybe 1/4 of cup. They turned out great and smell so good. They made quite a few muffins.  I will freeze some and see how they turn out.

This mix was also a 50% off table find from our last visit to Lil's.

Betty Crocker Gluten Free Chocolate Chip Cookies


In the oven now, and I already see our mistake. I used crisco instead of butter because I didn't have any of the normal dairy free butter I use to bake. My son thought the mix looked a little dry. So I thought I would add some water like the crisco website said. Big mistake the ones before the water was added turned out good.

The only reason I tried to make these with out the butter was because we went to a barbecue at his grandfather's house and normally he never has any dessert. But this time he had caramel cake and Mani was sad he couldn't have any. He said we were all lucky and that he was tried of not being able to eat things. His grandfather gave him a plum and he was sort of fine with that.

Mani really wants to like chocolate but he just doesn't care for the taste.  However, that doesn't stop him from begging for chocolate.  I always feel guilty and buy it, even though I know he won't like it.  The bag of chocolate chips above are the ones from the mix that he made me sift out.

This Ziploc container came home with a dent in the side of it, lol.  But, it still works and I have the second one still.

13th Day of School Lunch

I woke up at 5:00 am but didn't actually get out of bed right away.  Why did I do that?  I really wish I would have just got moving because I forgot that I hadn't prepared Mani's uniform or my clothes last night.  Luckily, I had a pair of pants already ironed for Mani so I just had to iron his polo and my top could have used a once over but of course no time for that.

But I did remember to send an extra juice box to school for Mani because he had to bring in an object that was matter.  So he decided he wanted to bring a liquid, for his example of matter.  I didn't have any water bottles and I doubt I would have sent one any way because I wouldn't want another book bag disaster like the one that wet his assignment book up.  I suspect he hopes the teacher returns the juice box to him and he will sneak and drink it.  Man I wish he had the patience to make sure the water is properly closed so he could take a water bottle to school because he sure would be taking one tomorrow if he drinks that second juice box. 

Anywho, today's lunch has carrots, half an orange, the last lonely marshmallow that was left in the container, grapes, and soy nut butter and strawberry jam on brown rice bread.

I added the pick and silicone cup because he didn't say anything about the picks yesterday.  And to be honest I didn't dare ask because I was afraid of the response I would receive.

I think I'm going to post this on What's for Lunch Wednesday because this is probably the cutest lunch I'm allowed to make.
