12th Day of School Lunch

Didn't wake up when I should have, however, I am quite proud of myself because I cooked three meals last night. We are just going to forget that I planned on doing this Sunday. So today and tomorrow I don't have to go home and cook Yay Me!!! I know I am going to cook shrimp on Friday, I just need to figure out what to cook for Thursday.

Anywho, back to lunch for today, a slice of brown rice bread, a strawberry, grapes, left over broccoli from dinner, left over corn from Saturday, and corn fettuccine. Wow that's alot of corn. I forgot when making this that the pasta is actually corn pasta, which Mani is so in love with. I actually love it too, but it too expensive for the whole family to eat. A box cost $7.99, now compare that to the box of whole wheat pasta that I purchased for $0.88. The store owner also said that the penne is also excellent I will try that next time.


This is the first time I put broccoli in his lunch we will see if it comes back untouched. I have high hopes because he said it was really good after dinner last night. I found the broccoli on sale. I got two big bushels for $1.00.

I couldn't help adding the picks, we'll see what he has to say about that.

11th Day of School Lunch

I woke up earlier than I normally do, not when I should but earlier, yet I still some how managed to be running late. I have to do even better, really I think I need to wake up early on the weekends as well because I just wasn't sleepy late night. Anywho, this lunch has carrots, grapes, marshmallow, and a corn beef sandwich. And I really need to work on my lighting. I probably should use my point and shoot camera but its so much easier to use my iphone. I don't have to worry about batteries and normally I can always locate my phone. The iphone may not be bad if I find a lighter background.

10th Day of School Lunch

It's have Fun Friday so the only healthy item is the apple. Mani found a box of Ian's gluten free chicken nuggets on our last trip to Whole Foods. I'm so glad he did because now I don't have to waste money on the Ian frozen dinner that he would only eat the nuggets out of and the rest would go to the trash. So this lunch contains the Ian chicken nuggets, Lucy's cinnamon thins, chips, ketchup for the nuggets in the little container, and an apple I tried to make look like the turtle shell design, but as you can see I was in too much of a hurry for perfection.
When he saw the Lucy cookies, he told me he didn't like them any more. We haven't been able to fine a ready made cookie that he likes since they discontinued his favorite cookie from Glutino. This was the closet thing to it but maybe he will eat this box if I include them in his lunch. But like his crackers he just gets tired of them and just stops eating them all together. I have a box of Betty Crocker gluten free chocolate chip cookie mix at home that I'm going to try. Maybe the weather will not be that hot and we can bake them this weekend.

I want a PlanetBox NOW!!!

I just saw this PlanetBox lunch box on a blog I started following. I just can't afford the $70 with shipping to get one. However, as soon as I can I will have that lunch box. I was able to satisfy my thirst for a Easy LunchBox with the Ziploc imitation but I don't know if I can stand waiting.

9th Day of School Lunch

I woke up at 7:05 and Mani has to be at school at 7:50, needless to say but we were late. The lunch I managed to throw together includes cherries, cantaloupe, corn beef sandwich (which I let the bread get darker than I wanted because I was trying to do 50 things at once), and popcorn. I think I should try planning his lunches for a week so I know what I'm making and I know what I need from the store. Because, yesterday I went to the store and didn't buy any vegetables for his lunch and I'm all out of fruit. The picture actually makes the sandwich look darker than what it was but I didn't have time to play with getting a better picture. I'm lucky I took a picture at all. I know I'm not suppose to put anything cute in his box but I couldn't help putting in the orange pick for the cherries. He will probably use his fingers instead of the pick anyway but I try.

8th Day of School Lunch

Cherries, cantaloupe, corned beef and pastrami sandwich, and marshmallows. I woke up really late but I'm proud I was able to still throw this together. Yesterday we locked ourselves out of the house. Do you believe that? Almost five months living in the house and we never made keys to leave at a relatives house. So we did a move like "some fool from the projects" lol , Antoine Dodson maybe looking for us.

4th Day of School Lunch

I tested the Ziploc "easylunch box" with a water bottle in his lunchbox and it actually fit, yay. In today's lunch we have pastrami and corn beef with lettuce on brown rice bread. The last time I brought pastrami Mani didn't like it, but this time he thought it was so good. Carrots, cherries, a little caramel popcorn, cantaloupe and watermelon complete this lunch.

3rd Day of School

Carrots, caramel popcorn, strawberries, and watermelon. He had a chucky soy nut butter and jelly sandwich along with a bottle water. I purchased a Ziploc container that is exactly like the Easylunch boxes that I would like to use because the sandwich and everything could fit in one container. However, the lunch box that Ziploc will fit in will not allow room for a water bottle but a drink box will fit. I went to the store yesterday and didn't even think to buy juice boxes. But water is better for him.

"Wonder Balls"


Cookies that turned out to be "Wonder Balls". I tried them two ways cinnamon sugar and plain drop cookies. The cinnamon sugar cookies turned out nice because I flattened them out, however, Mani preferred the taste and texture of the now famous "Wonder Balls". Daddy even liked them. I put a few in a Lock n Lock container and put them in the freezer, I will see how that turns out.
I made these from The Cravings Place Cake & Cookie Mix. I totally forgot how good their mix could be. When I first started this adventure with Mani, their mix was one of the only ones that you couldn't tell was gluten free. I remember one Thanksgiving, I made the brownie mix and everyone but Mani ate them. He still doesn't like chocolate.
The mix was actually 50% off because it was nearing the expiration date. I wish I would have grabbed the other one that was left.

Papi Help Me

My sister came to drop off something at my house when Mani was 3 years old. I ran down to meet her at the gate because here baby was in the car. Well, I get down there and she wants to show me something she brought. So I look really quickly and when I get back in the hallway I hear crying, I think is that my baby and I run upstairs quickly and I hear my poor baby saying Oh Papi help me please Papi help me. I felt so guilty. But I'm writing this post because now my sons relationship with Papi has changed so much. Papi is older now and less active so him and Mani don't spend as much time together.
